Peel the carrot and cut into sticks.

Cut the spring onion into 4 cm (1.5 in) lengths, remove the center, cut into sticks and soak in water.

After soaking the pickles in water to remove some of the salt cut into sticks.

Mix (A) together forming the dressing.

Dress the carrot, spring onion and pickles, serve in a small bowl and decorate with some cilantro.
