Slice the fillets in half horizontally to reduce thinckness, then season with salt and pepper.

Mix (A) ingredients together in a bowl until uniformly combined to prepare the seasoned panko.

Line a casserole dish or other oven-safe dish with parchment paper, then arrange the fillets inside. Cover evenly with the panko mixture (2). Bake in an oven for 20 minutes at 230 C (446 F).
