Cut chicken into bite-size pieces, and season with salt and pepper. Cut onion into 2 cm (3/4 in.) cubes. Split king trumper mushrooms into groups of 4-6. Remove fresh shiitake mushrooms stems, then cut each shiitake mushroom into quarters.

Heat olive oil in fry pan and saute chicken. When chicken is browned, add onions then mushrooms and saute well. Season with salt and pepper.

Spread (2) evenly in heat resistant container, put on tomato sauce and sprinkle with panko and cheese. Bake in oven at 220 C (430 F) for 6 minutes. Finish with parsley and serve.

Use a knife to cut away yellow fat and excess skin.
Shiitake mushrooms - removing the stem

The stem can be easily removed by folding it over and pulling it off at the base, where it is attached to the cap. You can also cut it off from under the cap with a knife.
