Directions

  1. Sprinkle the soy sauce and sake onto the pork, set aside to soak in flavor for about 5 minutes, then dust with the potato starch.
  2. Spread out each slice of (1) in boiling water, and allow the water to come to a boil once more. Once the color changes, place the meat into ice water, then drain in a colander.
  3. Remove the tomato stem and slice into small wedges. Finely chop the myoga. Mix together (A) ingredients.
  4. Serve (2) and (3) onto a dish, then pour (A) on top.

Tomatoes - wedge cut

Cut the tomato in half lengthwise, then insert the knife in a v-shape on both sides to remove the stem. Insert the knife from the center of the cut surface and cut into equal-size wedges.
