Directions

  1. Separate the leaves and roots of the turnips, then peel the roots and cut into wedges.
    Combine (A) and soak the turnip roots.
  2. Parboil the turnip leaves and cut them into 2 cm (3/4 in.) lengths.
    Rub them with salt, then lightly rinse and drain.
  3. Cut the yuzu into quarter slices.
  4. Lightly rinse (1) with water and drain.
    Mix together (2) and the yuzu slices, and place in a container or bowl.
  5. Combine (B) to make the pickling juice, add the turnip roots, then let marinate in the refrigerator for 30 minutes.
