- Kashiwa-mochi is rice-flour dough dampened with water, steamed and kneaded, then wrapped around a ball of sweet adzuki bean paste. This is then folded into a preserved oak (kashiwa) leaf.

Add the soy sauce to the sweet red bean paste and then make 10 balls.

Place the non-glutinous rice flour into a bowl, pour in 200 ml (6.8 fl. oz.) of hot water and mix with chopsticks. Once cooled, knead well by hand.

Place a dish towel over a steamer, tear (2) into large bite-size pieces, and steam over high heat for 12~15 minutes until cooked through.

Place (3) into a bowl filled with water, then quickly remove, pat dray and place into a bowl and knead by hand.

Add in the sugar and potato starch, and continue to knead until smooth.

Roll into a cylinder, split into 10 portions, and stretch each by hand into an oval shape.

Wrap (1) in (6) and close off completely. Wash the oak leaves in water, pat dry and then wrap these around the mochi.

Steam over high heat in a steamer for 3~5 minutes and then serve.
