Directions

Mix (A) into the rice to prepare the sushi rice. Add and mix in the olive oil and pepper.

Peel and section the grapefruit, then remove the thin skin and divide into halves.

Cut the ham into 5 mm (0.2 in.) squares.

Mince the onion, then place into cold water for about 5 minutes. Squeeze in a paper towel to remove excess moisture.

Mix (2) to (4) into (1), and serve into bowls lined with the salad leaves.
- When cooking the rice, add in a 3 cm (1.2 in.) square of kombu (kelp) and 1 Tbsp of sake, and keep the water level slightly lower than usual to prepare extra delicious sushi rice. Please check out our Glossary under the Cookbook Tab for information on kombu and sake.
