Directions

  1. Remove stems and mince the shiitake mushrooms. Mince the long onion as well.
  2. Place the ground pork, (1) and (A) into a bowl and combine until the mixture becomes sticky, then divide into 12 portions.
  3. Make a circle with the thumb and index finger of your left hand. Place the dumpling wrapper and (2) on top, and push down on the filling to perfect the shape. Repeat the same process with remaining ingredients.
  4. Place the cabbage into a lidded heat-safe container and then place (3) on top. Use a circular motion to pour on 1 Tbsp of water, cover with the lid and heat in a microwave (600 W) for 7 to 8 minutes, then drizzle on the soy sauce.

Shiitake mushrooms - removing the hard base

The hard base, called "ishizuki" in Japanese, is the blackish tip at the end of the stem. Use a knife to cut or scrape off this portion.

Japanese long onion - finely chopped

Remove the roots of the Japanese long onion, and insert vertical cuts. Then chop up finely at right angles from end to end.


Cabbage - julienned

Separate the leaves and remove the core. Cut the leaves in half lengthwise to make it easier to julienne, then stack, roll up, and slice very thinly from end to end.
