Trim the asparagus by removing their hard bases and cut each stalk into 6 cm (roughly 3 in.) pieces.

Heat the cooking and sesame oil in a pan and stir-fry the asparagus with the ginger until tender.

Add the orange peel, soy sauce and pine nuts to finish and serve.
Cooking Basics

The skin from the root to about 1/3 to 1/2 way up the asparagus spear is hard, so use a peeler to remove this. Use a peeler rather than a knife to achieve thin and even peeling.




Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
