Directions

  1. Drain the tofu, after cutting the thickness in half, dry well.
  2. Sprinkle salt on okra and work in well with fingers, quickly boil. After removing and cooling, chop finely and mix with (A).
  3. Lightly fry the sardines in sesame seed oil. Cut the Welsch onion into small pieces and soak in water.
  4. Heat a good amount of sesame oil in a pan, fry both sides of (1) until brown.
  5. Arrange (4) on a plate. Place (2),(3), katsuobushi and roasted sesame seeds on top. Lightly douse with soy sauce.

Tofu - draining

Wrap tofu in paper towel and set aside for 15 to 20 minutes. This method works best if the tofu is cut into the desired sized pieces beforehand to remove excess moisture.  
Or wrap tofu in paper towel, place on a tray or other suitable surface and place a weight of 500~1000 g (17.7~35.3 oz.) on top and set aside for about appropriate minutes to release as much moisture as possible.

Okra - removing fuzz

Cover the okra lightly in salt and rub all over gently to remove the fuzz. This will make the color more vivid and soften the texture as well.
