Directions

  1. Lightly toast the pine nuts in a toaster oven.
  2. Without peeling, steam the carrot and sweet potato until soft enough to be pierced with a toothpick.
    * Instead of steaming, feel free to microwave in a lidded heat-safe container.
  3. Peel the sweet potato, cut into 2 cm (0.8 in.) cubes. Without peeling, chop the carrot up in the same way.
  4. While still hot, dress with (A), mix in the pine nuts and raisins, arrange in bowls and serve.
