Directions

  1. Rinse the oysters with cold water. Divide the tofu into 12 equally sized pieces. Chop the long onion into 5 cm (2 in.) lengths and julienne the ginger.
  2. Use a gridiron to grill the long onion.
  3. Place 800 ml (27 fl. oz.) of water and (A) into a pot, add in the ginger and grilled tofu, turn on the heat and simmer on low.
  4. Cover the oysters with the potato starch, quickly place into boiling water, then add into (3).
    * This step helps to ensure that the oysters will not shrink and will remain plump and juicy.
  5. Add in (2), bring the mixture to a quick simmer, then sprinkle on the chopped green onion.

Cooking Basics

Oysters - cleaning

Place the oysters into a strainer, then place into 3% salt water and lightly stir with your hands. Clean by shaking the bowl back and forth. By doing so not only sand, but any sliminess and strong odor will also be removed. After cleaning, use paper towels to thoroughly remove any remaining moisture.

Ginger - julienned

Peel the skin of the ginger, and cut thinly, gradually sliding and stacking the slices. Then thinly slice from end to end.
