Mix and soak the the dried plums in mirin.

Pull the sinew from the chicken breasts. Slice an opening in the thickest section of each piece, smear (1) inside.

In the following order dip (2) in the flour, egg and finally breadcrumbs.

Fill 2 cm (3/4 in) of a fry pan with cooking oil, fry until golden at 170 C (338 F) or medium heat.

If available spread green perilla on a plate, cut each fried piece in half and arrange on top.
