Directions

  1. Peel sweet potatos, cut into 5mm (1/5 inch) thick half circles.
  2. Dice onion.
  3. Melt butter in a pan and saute diced onion (2) until clear. Add sweet potato (1) and continue sauteing.
  4. Add ingredients (A) to pan, lightly salt and pepper. Stirring occasionally, cook until sweet potato softens, around 10 minutes. Remove from heat.
  5. Whisk mixture until smooth, add milk, then return to heat. Stir in ingredients from (B). If available, top with diced green onions as desired.

Sweet potatoes - removing starch

To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
