Directions

  1. Julienne the potatoes using a slicer or a knife, place into cold water and then drain.
  2. Cut the bacon into 5 to 7 mm (about 1/4 in.) widths.
  3. Melt the butter in a fry pan. Stir-fry the potatoes until translucent, then add in (2) and stir-fry further. Sprinkle the curry powder, soy sauce and mirin into the pan and stir-fry all the ingredients together.

Once cut, the starch in potatoes causes them to turn brown due to the process of oxidation. To avoid this soak cut potatoes in cold water. By doing so you will also be able to remove any starch on the surface and prepare less-starchy dishes. Completely cover in cold water and soak for about 10 minutes. Changing the water halfway through is not necessary.
