Kabocha Squash Salad

  1. Mince the onion, place into water, then drain and squeeze out excess moisture.
  2. Remove the insides from the kabocha squash. Cut into approximately half, then arrange peel-side down on a heat-safe plate and microwave (600 W) for 3 minutes. Quickly mash with a pestle or spatula.
  3. While still hot, add and mix in the soy milk, soy sauce, butter and (1).
  4. Place the almonds into a microwavable mug, and heat in a microwave (600 W) for about 10 seconds.
  5. Serve (3) into separate dishes and garnish with (4).

Onions - finely chopped

Cut the onion with its outer skin removed vertically in half, and thinly slice cut-side down without cutting as far as the base. Then lay the knife flat and insert horizontal cuts, finely chopping from end to end.
