  1. For the asparagus, cut off 3 cm (1.2 in.) of the hard stalk, peel about 1/3 of the remaining stalk and then cut into halves.
  2. Halve the bacon slices and wrap 2 of (1) to make 1 bundle.
  3. Into a fry pan containing olive oil, place (2) with the wrap end facing down, cover with a lid and cook for 2 minutes over low heat, then turn over and cook the other side.
  4. Add in (A) and simmer together over medium heat.

Green asparagus - peeling off the outer skin

The skin from the root to about 1/3 to 1/2 way up the asparagus spear is hard, so use a peeler to remove this. Use a peeler rather than a knife to achieve thin and even peeling.
