One-Pan Crispy Chicken with Lemon Soy Sauce and Roasted Vegetables

broccoli

mixed mushrooms (shiitake mushrooms 3, king oyster mushroom 1, button mushrooms 6) *1

150 g (5.3 oz.)

red onion

200 g (7.1 oz.)

olive oil

70 ml (2.4 fl oz.)

*1 or use 150 g / 5.3 oz. of your favorite variety

Directions

    Chop the broccoli into small florets. For the fresh shiitake mushrooms, remove the stems and quarter. Slice the king oyster mushroom in half lengthwise, then cut into three pieces. For the button mushrooms, cut larger ones in half (if using other varieties, cut into bite-sized pieces). Remove the core from the red onion and thinly slice.

    Diagonally slice the chicken into 6 pieces. Season both sides with salt, pepper, and flour.

    Place (A) in a fry pan and heat over medium until golden and crispy, then remove from the pan.

    Pour olive oil into the fry pan and heat over medium. Add in the chicken, onion, broccoli, and mushrooms. Cook the chicken for about 2 minutes, then flip. Toss the vegetables to coat evenly with oil.

    Add the water to the vegetables and cover with a lid. Once boiling, steam-cook over medium-low for 4 to 5 minutes.

    Remove the lid, stir-fry the vegetables, and season with salt and pepper. Squeeze the lemon over the chicken and drizzle with Kikkoman Soy Sauce. To finish, sprinkle the crispy panko on top.

Cooking Basics

Shiitake mushrooms - removing the hard base

The hard base, called "ishizuki" in Japanese, is the blackish tip at the end of the stem. Use a knife to cut or scrape off this portion.

Chicken breast - slicing into thin diagonal cuts / sogi-giri

Lay the knife down almost flat to make thin slices. By doing so, larger slices will cook faster and flavors will be soaked up more easily.
