onion

1/2 (100 g / 3.5 oz.)

red bell pepper

1 (200 g / 7.1 oz.)

couscous

100 g (3.5 oz.)

olive oil

2 Tbsp

water for boiling

300 ml (10.1 fl oz.)

lemon with peel

rosemary

 3 to 4 sprigs

salt and pepper for seasoning the chicken

40 g (1.4 oz.)

Directions

    Remove the onion core, cut into 2 cm (0.8 in.) slices. Cut the bell pepper in half lengthwise, remove the seeds, and chop into bite-sized pieces. Scoop out the seeds and pulp from the kabocha squash and cut into large bite-sized pieces. Grate the garlic.

    Slice the chicken breast in half lengthwise.

    Heat the olive oil in a fry pan over medium heat. Add in the chicken and cook for about 2 minutes. Flip and cook for another minute. Add the onion, kabocha squash, bell pepper, and couscous.

    Add (A) and the rosemary, and place the lemon next to the couscous.

    Pour in the water. Turn the heat to high, and once boiling, cover with a lid and cook on low for 15 to 20 minutes.

    Remove the lid, season the chicken with salt and pepper, and squeeze the lemon over the couscous.

Cut the bell pepper in half, fold the stem and then remove the seeds with your fingers. This is an easier and less wasteful method than using a knife.
