Photo: Cauliflower Potage

A delicately sweet, thick cauliflower soup.

Ingredients(Servings: 2)

100 g (3.5 oz.)

50 g (1.8 oz.)

1 Tbsp

150 ml (5.1 fl. oz.)

  1. Finely mince up the cauliflower. Thinly slice up the onion.
  2. Thoroughly saute (1) in the butter.
  3. Pour in 100 ml (3.4 fl. oz.) of water. Allow to come to a boil and remove any scum that forms on the surface. Continue to simmer over medium heat.
  4. Place (3) into a blender, pour in the original soymilk and blend together.
  5. Warm the potage making sure not to bring to a full boil. Season lightly with salt and pepper.
  6. Ladle into single serving bowls and top with a splash of soy sauce.
