Divide the lettuce into 4 equal parts.

Cut the bacon into 1 cm (1/2 in) widths.

Remove the hard section from the watercress.

Fry the bacon in 2 tsp of olive oil. Add in the lettuce and stir fry. Pour in (A), cover and simmer for 3 min.

Add in the watercress and turn off the heat. Pour all in a bowl and drip on 1 tsp of olive oil. Season with black pepper.
