Directions

  1. Spread out the pork slices and light sift on flour in an even manner.
  2. Divide the watercress into 3-4 equal size pieces. Evenly divide the sweet potato in half and soak in water for a short time.
  3. Wrap all ingredients from (2) in a slice of pork and close with a toothpick. Lightly cover in flour.
  4. Heat cooking oil in a fry pan. Fry (3) while rotating occasionally in order to evenly cook.
  5. Pour in (A) and (B) and simmer well. Remove the toothpick while still hot, divide into edible size pieces and serve.

Sweet potatoes - removing starch

To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
