Season the pork with the soy sauce. Divide the nori seaweed into 4 x 10 cm (1.5 x 4 in.) pieces.

Lightly cover the pork in starch. Place the nori seaweed on top followed by the perilla and roll up tightly.

In the following order, dip (2) into the flour, egg and bread crumbs to coat in batter. Fry in hot oil. Massage the okra by hand with salt to remove extra moisture and fry as is.

Serve with a side of the lemon cut into wedges and the mixed sauce (B).

Okra - removing fuzz
Cover the okra lightly in salt and rub all over gently to remove the fuzz. This will make the color more vivid and soften the texture as well.
