Remove pork sinews, and salt and pepper.

Break apart eringi mushrooms into 4-6 portions by hand. Divide shimeji mushrooms into individual mushrooms.

Heat olive oil in frypan, and add (1) to pan. Brown both sides, add (2) and saute. Lightly salt and pepper, then add tomato sauce and cook for 10 minutes. Adjust flavor with salt and pepper. Serve with basil and other garnish if available.

Pork loin - removing sinew / silver skin
There is a tough connective tissue (sinew also called silver skin) between the fat and pink meat of the loin. This portion will not melt away (as fat does) but rather will harden and twist when cooked. Making several cuts into the sinew with the tip of a knife will prevent this and also improve the texture of the meat.

The base of king oyster mushrooms is somewhat hard and tough, so please use a knife to shave this portion off.
