Cut the sweet potato into pieces about 3 to 4 cm (1-1/2 in.) in length and 7 mm (1/4 in.) in width and height. Rinse with water.

Cut the bell peppers in half lengthwise and remove the seeds. Then, cut into 1.5 cm (1/2 in) wide rings.

Heat up oil in a pot, then dry (1) and (2) and deep fry. Drain off the oil and sprinkle with salt.

Sweet potatoes - removing starch
To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
Green peppers - removing seeds
Cut the pepper in half, fold the stem and then remove the seeds with your fingers. This is an easier and less wasteful method than using a knife.
