Remove stems from the cherry tomatoes and cut into halves.

Heat 1 tsp of olive oil in a fry pan, crack open and add in the eggs, once somewhat cooked, fold in half. Once golden on both sides, remove and serve onto plates.

In the same fry pan heat 1 tsp of olive oil and saute (1). Once softened, adjust the flavor by adding the soy sauce and mirin. Place atop of (2) and garnish with the butterhead lettuce.
