
For this recipe, make a sandwich using Tonkatsu and shredded cabbage as the filling. The rich flavor of the Tonkatsu sauce pairs perfectly with the bold taste of mustard butter generously spread on the bread.

Shred the cabbage and place it in a bowl. Sprinkle with salt and rub it in gently until slightly softened. Mix together the ingredients of (A) to make the mustard butter.

Spread half of the mustard butter onto one slice of bread. On another slice, place half of the cabbage and one piece of Tonkatsu, then drizzle with Tonkatsu sauce. Sandwich the two slices together. Repeat to make the second sandwich.

Trim the crusts from both sandwiches and cut each in half. Serve on a plate and garnish with pickles.

Separate the leaves and remove the core. Cut the leaves in half lengthwise to make it easier to julienne, then stack, roll up, and slice very thinly from end to end.
