Directions
- Cut the bamboo shoot into bite-size pieces.
- Mix together (A) in a pot, bring to a quick boil. Add in (1), cover with an otoshibuta (drop lid) and turn the heat to a low medium to slowly simmer.
- Place the bonito flakes into a separate pot and toast over low heat until crisp. Once cooled, wrap in paper towel, and lightly crush with your hands to prepare fine flakes.
- Once the cooking liquids from (2) are almost boiled down, add in (3) and mix all together until the cooking liquids are boiled down.
