boiled bamboo shoots

150 g (5.3 oz.)

bonito flakes

200 g (7.1 oz.)

(A)

water

200 ml (6.8 fl. oz.)

sugar

1/2 Tbsp

Directions

  1. Cut the bamboo shoot into bite-size pieces.
  2. Mix together (A) in a pot, bring to a quick boil. Add in (1), cover with an otoshibuta (drop lid) and turn the heat to a low medium to slowly simmer.
  3. Place the bonito flakes into a separate pot and toast over low heat until crisp. Once cooled, wrap in paper towel, and lightly crush with your hands to prepare fine flakes.
  4. Once the cooking liquids from (2) are almost boiled down, add in (3) and mix all together until the cooking liquids are boiled down.
