Directions

  1. Cut salmon into large bite-size portions, sprinkle with salt and pepper.
  2. Bread salmon pieces in the order flour-egg-panko-grated Parmesan cheese.
  3. Fry salmon in oil heated to 170C (340F) until cooked through. Remove from oil and set aside to allow excess oil to drain.
  4. Serve salmon together with torn lettuce, watercress and lemon wedges.
  5. In a small bowl, mix ingredients from (B) and enjoy as dipping sauce.
