A creamy gratin made with the Japanese ingredients of mochi (rice cakes) and soymilk.

- Chop the mochi into bite-size pieces and toast until slightly puffed up.
- Coat a gratin dish with butter, and arrange the thinly sliced button mushrooms inside. Add in (1), the soymilk, the soy sauce, salt and pepper on top, then lastly tear up the cheese slice and lay this on the very top.
- Cook in a toaster oven or oven until golden brown on top.
