Directions

  1. Place the buckwheat flour into a bowl and quickly knead while adding 200 ml (6.8 fl. oz.) of hot water. When prepared properly the mixture should have a similar consistency to miso paste. Adjust the added hot water accordingly.
  2. Boil water in a pot, use a spoon to drop bite-size balls of (1) into the boiling water (using a spoon will make forming balls easier).
  3. Scoop up balls that float to the surface and place these into a colander that has been lightly wet with water.
  4. Place (A) into a pot, bring to a boil, add in the potato starch and an equal amount of water to thicken the sauce.
  5. Serve the buckwheat dumplings on plates with as much of the sweet sauce (4), adzuki beans and roasted soybean powder as desired.
