These crispy Japanese Taro Croquettes are filled with dried shrimp, making for a tasty and satisfying appetizer or side dish. Satoimo (taro) has fewer calories than potatoes or sweet potatoes, and because it uses dried shrimp for protein, this croquette is lower in calories than the regular potato-based version.

Directions

  1. Rinse the taro and arrange into a lidded heat-safe container. Cover and microwave (600 W) both sides for 3 minutes each, or until these become soft enough to be pierced by a toothpick. Remove and allow to cool. Peel the skin with a knife while taking care to remove any hard parts, then mash well with a potato masher or fork.
  2. Combine (A) into (1), then divide into equal portions to form balls of your desired size.
  3. In the order of flour, egg and then breadcrumbs, dip each ball into (B) then deep-fry in oil heated to 180°C (356°F) for 3 to 4 minutes.
