Directions

  1. Cut the potatoes into 1 cm (0.4 in.) thick half-moon slices and place into cold water.
  2. Slice the ham into eighths.
  3. Slice a small opening into the fava bean skin, and boil in slightly salted (extra) hot water for 1 to 2 minutes, remove into a colander to drain and peel off the skins.
  4. Place (1) into a pot with just enough water to cover all, turn on the heat and boil until soft. Drain in a colander, return to the pot and turn the heat to low to evaporate any remaining water while mashing with a fork.
  5. While still hot. remove (4) to a bowl, and mix in the soy sauce. Once cooled add in the mayonnaise, (2) and (3) and combine all together.

Potatoes - soaking in water

Once cut, the starch in potatoes causes them to turn brown due to the process of oxidation. To avoid this soak cut potatoes in cold water. By doing so you will also be able to remove any starch on the surface and prepare less-starchy dishes. Completely cover in cold water and soak for about 10 minutes. Changing the water halfway through is not necessary.
