150 g (5.3 oz.)

hakusai / napa cabbage

300 g (10.6 oz.)

(A)

100 ml (3.4 fl. oz.)

1 Tbsp

(B) Potato Starch Solution

2 Tbsp

Directions

  1. Cut the pork into 4 cm (1.6 in.) widths and chop the hakusai at a 45 degree angle into large pieces. Remove hard bottoms from the shiitake mushrooms, then quarter.
  2. Bring (A) to a boil in a fry pan, add in (1) and cover with a lid. Once boiling allow to simmer for about 10 minutes on low.
  3. Add in (B) while stirring, and lastly quickly bring to a boil to thicken the cooking liquids.

Shiitake mushrooms - removing the hard base

The hard base, called "ishizuki" in Japanese, is the blackish tip at the end of the stem. Use a knife to cut or scrape off this portion.
