Directions

  1. Cut the pork into bite-size pieces.
  2. Remove the hard base from the shimeji mushrooms and separate into small bunches. Julienne the ginger.
  3. Place (A), (2) and (1) into a small pot over medium heat. Once boiling, cover with a lid and simmer over low heat for about 2 minutes.
  4. Remove the lid, turn the heat to medium and boil down the cooking liquids.

Cooking Basics

Shimeji mushrooms - cutting off the hard base

Many of the shimeji mushrooms available in stores have been cultivated in mushroom beds, causing the roots to be tighly squeezed together. To some the chaff is attached, so be sure to cut away this hard base before using.

Ginger - julienned

Peel the skin of the ginger, and cut thinly, gradually sliding and stacking the slices. Then thinly slice from end to end.
