Unagi eel are those found in freshwater and Anago eel are those found in saltwater.

Lightly stroke the anago eel with the back edge of a knife to remove any slimy moisture. Cut in half. Cut the bell peppers into 2 cm (0.8 in.) wide vertical pieces.

In the following order, dip (1) in the flour, the beaten egg and finally the bread crumbs. Deep-fry in moderately hot oil.
