Cut the spinach into 2 cm (0.8 in.) lengths.

Beat the eggs, then add the mirin and 2 tsp of water and continue to mix.

Place the olive oil into a fry pan and heat, then add the butter. Add the spinach to the pan and ensure it is evenly coated with butter. Saute over medium-heat.

Add the egg mixture to the pan and continuously mix. Before the eggs can thoroughly cook and solidify, add the soy sauce. When the eggs are cooked remove from the heat onto a plate.
