Cut the pork into bite-size pieces, coat thoroughly with the seasonings (A).

Chop the garlic chives into 4 to 5 cm (1.6 to 2 in.) lengths.

Blot the atsuage with paper towel, cut in half lengthwise and then cut into 1 cm (0.4 in.) width slices.

Heat the sesame oil over medium heat in a fry pan, saute the ginger with (1), and simultaneously cook (3) in available fry pan space. When golden on one side, turn over.

Once the pork is cooked through, sprinkle on the soy sauce and mirin, add (2), quickly saute and serve onto plates.
