Directions

  1. Cut the pork into bite-size pieces, season with (A).
  2. Chop the garlic chives into 4 to 5 cm (1.6 to 2 in.) lengths.
  3. Blot the atsuage with kitchen towel, cut in half lengthwise and then cut into 1 cm (0.4 in.) wide slices.
  4. Heat the sesame oil over medium heat in a fry pan, saute (1) with the ginger, and simultaneously cook (3) in available fry pan space. When golden on one-side, flip over.
  5. Once the pork is cooked through, sprinkle on the soy sauce and mirin, add (2), quickly saute and serve on plates.
